Thai spring rolls

Ingredients

Preparations

  1. We start with the spring roll sheets. Make sure they are defrosted. And separate them. After separation cover them properly. With for example a cloth. Else they will dry out.
  2. Next the carrots. These we will cut in the length. So we will get long small strips.
  3. Now the mushrooms. These we first cut in four. And the cut them smaller.
  4. Next the cabbage. This we will cut first in half. And then really small. Everything needs to be very small. Else, later it will be difficult to roll.
  5. The soaked glass noodles. There are too long. So we will make them small. To do this easy we will use scissors.
  6. Garlic and pepper We will put in the mortar. And squash them good.
  7. When the garlic and pepper are squashed good. The preparations are done and we will mix.
  8. Heat up the oil in the wok. Then first add the garlic and pepper mixture. Stir this for a moment.
  9. Next add the minced chicken. Stir this until the minced chicken is baked.

  11. Next we will add the oyster sauce. The sugar. Soy sauce. And the maggi. Mix this very thoroughly.
  12. Finally the glass noodles. And bean sprouts. Keep stirring until everything Is mixed properly.
  13. When it is ready put it aside to cool down. And then we will roll.

Cooking

  1. Take a spoon from the baked mixture. And put it on the nearest corner.
  2. Take the corner and roll it until just below the middle.
  3. Fold the middle corners to the inside. And then roll over them.
  4. Use egg-white to moisturise the last corner and close the spring roll with it.
  5. Roll as tight as possible, cause then they will get the least greasy during the baking.
  6. Do the other spring rolls in the same way.
  7. When the spring rolls are done freeze them for a minimum of 90 minutes before baking.
  8. Heat up the frying pan on 180 degrees.
  9. Next add the spring rolls. Make sure they have enough space.
  10. Bake until they are golden brown and float. Then they are ready to serve. With for example sweet chilli sauce.
